Beef smells like sweat : AskCulinary
So, we grind red meat chuck at paintings to make burger patties (each 2 days). The closing chuck we won (the day prior), the meat smelled bizarre. Not your standard rotten odor, simply bizarre. The closest odor can be like sweat or improperly dried laundry. I did not truly listen, and attributed it to being vacuum packed. But after grinding and shaping the patties, the odor is noticeably more potent. We cooked a few them, and did a style check. While the beef isn’t off, that lingering sweat flavour remains to be there. We chucked away the entire batch. The subsequent batch used to be again to standard.
My butcher is adamant his red meat is as much as usual, and cannot inform me why it smells this fashion. He thinks we infected the beef by some means (which we surely didn’t). Our procedure: trim, cube, freeze for as much as 1 hour, grind, weigh & form. The meat grinder portions are ALWAYS completely washed & sanitised immediately after use.
Can anyone please percentage some gentle as to what brought about that odor? I will be able to’t in finding the rest on the internet…
